This study has been carried out in Public Bread Factory of Antalya Metropolitan Municipality. Factory has been established on Antalya in 2007 and meets bread requirements of this region. Business, in which employs 90 people, is a medium-sized companies, offers their products under the brand named "My Bread". Purpose of thisstudy is to renew Public Bread Factory processes with Daven port Model which is one of Reengineering methods and for this simulation models have been developed for thisstudy. Inputs of generated simulation models have been determined according to in put analysis out puts of used package program (ARENA 9.0). In the pre-simulation applications of Reengineering, processing times organized by the business has been received for production process of packed bread group. According to, application studies have been carried out. To compare before and after reengineering processes, the old and new systems have been investigated within the frame work of the data received from business and measurements of time has been made for renewed operation. In production process of packaged product group within the factory; -Boilers’ entry time to production line has been decreased from 1 hour to 10 minutes and a reduction with %83 is provided. The number of boil erentering intoproduction in a day has increased from 8 boilers to 36 boilers and has been increased by 77%. –Sandwich bread was added to the productrange. With this application, the total daily production capacity of factory has been increased from 180.000 pieces to 600.000 piecesbread.

Bu çalışma, Antalya Büyükşehir Belediyesi Halk Ekmek fabrikasında gerçekleştirilmiştir. Fabrika, 2007 yılında Aksu/Antalya bölgesinde kurulmuş, bölgenin ekmek ihtiyacının % 80’ini tek başına karşılayabilmektedir. Çalışmanın amacı, iş süreçlerinde yeniden yapılanma ihtiyacı duyan Halk Ekmek Fabrikasında, Değişim Mühendisliği yöntemlerinden biri olan Davenport modeline göre süreçleri yenilemektir ve bunun için çalışmada benzetim modelleri oluşturulmuştur. Oluşturulan benzetim modellerinin girdileri, kullanılan paket programın, Arena 9.0, alt modülünün, çıktılarına göre belirlenmiştir. Değişim Mühendisliği uygulama çalışmaları Değişim mühendisliği öncesindeki ve sonrasındaki süreçleri kıyaslayabilmek için eski ve yeni sistemler işletmeden alınan veriler çerçevesinde incelenmiş ve yenilenen işlemler için zaman ölçümleri yapılmıştır. Yapılan bu çalışma sonucunda fabrika bünyesindeki Ambalajlı ürün grubu üretim sürecinde; -Üretim hattına kazan girişi süresi 1 saatten 10 dakikaya düşmüş, %83 oranında bir azalma sağlanmıştır, - Üretime giren kazan sayısının günlük değeri 8 kazandan 36 kazana çıkmış, % 77 oranında bir artış sağlanmıştır, -Ürünlere yeni bir ekmek çeşidi -sandviç ekmeği- eklenmiştir. Bu uygulama ile beraber fabrika toplam günlük üretim kapasitesi 600.000 adet ekmeğe çıkarılmıştır.
